2015 Chateau Aimee

Winemaker’s Notes

Chateau Aimée is a small 30 acre vineyard with vines that are around 30 years old which practices sustainable farming. The grapes are hand-picked and sorted. They are cold macerated for 4-5 days before fermentation, both taking place in concrete and stainless steel vats. Then they go through a long maceration post fermentation of 4 weeks with daily pump overs. Aged in vats for 12 months and then moved to new French Oak barrels for 2 years.

Tasting notes

This wine is medium bodied and a dark garnet in the glass. It has notes of blackberries, plum, violets,
cassis and vanilla, and slight herbs. On the palate blackberry, plum, and tobacco with smooth tannins
and a nice finish.


Serving Suggestion

Pairs well with steak, lamb or game meats.
