This is a family run, certified organic winery focusing on Bordeaux varietals. The Vineyard's red soil is
mineral rich of iron and calcium carbonate (a mixture of sand, silt and clay). The quality and prestigious
IGT wines from this incredible terrain offer an excellent expression of aromas and flavours. This
Cabernet franc is produced in years only when the grapes have reached an optimal ripeness and are
perfect. The vineyards lays on the side of the hill, along handmade stone terraces and are perfect due
the iron-rocky composition of the soil, and the exposure to the sun light. Fermentation takes place in
steel vats(controlled temperature between 24/27 degrees), on the skins for 14/18 days. Maturation, 24
months in French barriques, second and third passage. Fining, at least 18 months in bottle.
This is an incredible full-bodied wine with notes of blackberries,leather, tobacco ,spices and liquorice.
Flavours of dark berries, licorice and cocoa. The tannins are fresh and well integrated and balanced with
the wine’s acidity. This 100% Cabernet Franc is elegant and has long aging potential.
Pairs very well with game, duck, herb-crusted lamb rack, and marbled beef. Also with charcuterie, like
rillettes and pata negra (Iberian ham).
