Winemaker’s Notes

Mechanical harvest very early in the morning in order to take advantage of the morning freshness to preserve as much aroma as possible Cold skin maceration 24 hours under inert gas Pressing at low pressure, cold settling Yeasting and fermentation under temperature control Aging on fine lees, storage in vats in winter.

Tasting notes

Bright pale yellow colour with green reflections this wine has aromas of boxwood flowers and exotic fruits (lychees, passion fruit, etc.) It is a delicate wine with good mouthfeel and a lengthy fjnish. It combines the richness of a ripe Sauvignon with the liveliness of the fresh terroir from which it comes.

Serving Suggestion

The wine’s moderate acidity makes it a great pairing for appetizers like smoked salmon or shrimp. It will also pair nicely with Japanese Cuisine.
